Number of Servings: 6

Ingredients

    16 oz. (about 1 pkg) wide rice noodles
    1 1/2 pounds chicken breast, cut into small pieces
    2 tbsp peanut oil
    12 cloves of garlic, minced
    3 thai chilies, minced
    1/4 cup fish sauce
    1/4 dark soy sauce
    1/4 Golden Mountain Sauce (available at Asian grocery stores)
    1 tbsp sugar
    4 plum tomatoes, pureed
    1 green bell pepper, cut into strips
    1 red bell pepper, cut into strips
    1/3 cup fresh basil, chopped

Directions

In a medium-sized pot, bring water to a boil and cook noodles until they soften, but are still firm to bite. Drain noodles (leave just enough water to keep them moist) and set aside.

In a separate LARGE wok (Dutch oven will do in a pinch), heat garlic and chilies in peanut oil for 2-3 minutes. Add fish sauce, dark soy sauce, Golden Mountain sauce and sugar; mix well. Add chicken and saute' until cooked, about 5 minutes. Add the noodles, tomatoes and bell peppers and cook for another 5 minutes, stirring ingredients until noodles are well-coated in sauce and entire dish is well-mixed. Stir in basil leaves and cook for another few minutes.

*Note: This particular recipe is REALLY spicy. To vary the amount of spice, just use fewer or more chilies. For a really mild dish, substitute 2 tbsp chili powder for the chilies.
