Trying to figure out what to do with chicken breasts, I came up with this delicious combination! It's fast and easy, and loaded with flavor - perfect for a quick weeknight dinner. Ingredients

4-6 oz. boneless, skinless chicken breasts
6 pieces of quartered artichoke hearts
8 tsp. julienne cut sundried tomatoes, packed in oil, drained
2 T fresh basil
2 oz. soft goat cheese
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
Directions
Lay the chicken breast out on a cutting board and liberally salt and pepper. Using a sharp knife, make a pocket in each of your chicken breasts.
Rough chop the artichoke hearts, sundried tomatoes and basil. Put in a small bowl then crumble the goat cheese over the top. Lightly mix all together.
Divide the stuffing in to fourths and stuff each chicken breast. Secure with toothpicks. Lightly spray with olive oil cooking spray.
Either grill or cook in a hot oven (400 degrees) about 25 minutes until chicken is cooked through.
Serving Size: 4 servings, 1 piece per serving
