Ingredients

2 C Broccoli - chopped
1 large onion - chopped
8 Red Potatoes - chopped
1 TB Olive Oil
1/2 head red cabbage - chopped
2 Cups almond milk
2 cups water
Tips
This is good with any vegetables you have. The potatoes blend to make it creamy.
Directions
Heat oil and saute onion in large pot
Add broccoli, cabbage, potatoes and water. Cover and cook until potatoes are tender but not too soft.
Move 3 cups of veggies into blender and blend with 2 Cups almond milk. Blend until smooth then transfer to clean pot.
Blend remaining veggies in batches, using the stock for blender liquid.
Return to big pot and season with pepper and basil. Simmer for 10-20 minutes, stirring occasionally.
