    3/4 cup milk
    2 tablespoons white vinegar
    1 cup wheat flour
    2 tablespoons white sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 egg
    1/2 cup flaxseed meal
    2 small super ripe bananas

    for filling (you only need 6 tbsp but here is the recipe for a batch of it):
    2 C pureed strawberries (about a pint of strawberries with the stems removed and diced into the blender)
    3 tbsp Chia seeds (unground is for this calorie count but it would work with ground as well I am told)
    calorie free sweeter of choice (to taste)


mix all ingredients well with fork and you've got your batter... for the filling (if you don't want the filling its still very very tasty just subtract 10 calories per pancake) just puree strawberries (I tend to do this when I've got a pint that's going to go bad soon but they can be fresh too) and add a couple spoonfuls of chia seeds and let sit for 20 minutes so that the puree will almost 'gel' and get firmer similar to the texture of jam... pour some batter onto the griddle then a little 'jam' in the middle once it starts to bubble them cover with a bit more batter and wait to flip until they start to firm (or do like me and make them in an omelet or panini maker lol)

without filling: 184 calories per pancake

with filling (1 tbsp strawberry puree and .083 tbsp chia seeds per pancake- 6 tbsp puree and 1/2 tbsp all together for the recipe in other words though I make it in portions of about 2-3 C puree and 3-4 tbsp chia seeds at a time since we use it as jam... might be a little sour, just add calorie free sweetener of choice to taste): 194.8 calories
