Number of Servings: 12

Ingredients

    1 cup sugar
    1/4 cup oil (vegetable or canola)
    3/4 cup unsweetened applesauce (this is the replacement
    for 2 eggs & 1/4 cup of oil)
    1/3 cup water
    1 cup pumpkin puree (do not use pumpkin pie mix)
    1 - 3/4 cup flour
    1 - 1/2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1/8 tsp cloves
    1/4 tsp each allspice & nutmeg (or can substitute 1/2
    tsp pumpkin pie spice
    1/2 tsp cinnamon
    1/2 cup chopped dates

Directions

Mix sugar, oil, applesauce, water and pumpkin.

Add in remaining ingredients and mix well.

Bake in preheated oven at 350 for about 18 minutes.
