Introduction

Fish + Veggies + Pasta Fish + Veggies + Pasta
Number of Servings: 4

Ingredients

    Atlantic Salmon 4 fillets 3oz each
    Canned / Diced tomatoes 2 cans
    Frozen / Chopped Spinach 10oz
    Garlic 3 cloves
    Olive Oil 2 tbsp
    Thyme 1 tbsp
    Crushed Black Pepper 2 tbsp
    Oregano 1 tbsp
    Basil 1 tbsp
    Spaghettie - 5 cups cooked

Directions

Mix Tomatoes, Spinach, Garlic, Pepper, Olive Oil, Oregano, Thyme, & basil into Large Sauce Pan. cook over low-medium heat for 30 minutes stirring / mixing occassionally throughout. Cook spaghetti in seperate pot ( drain/rinse when done). Now remove 2/3rds of sauce pan mixture from pan and place in a bowl with a cover. Now take increase the temp to medium-high and cook salmon in sauce pan. Once Salmon is cooked all the way through (10mins or so. Flipping halfway through). Now put the ingrediants that you had removed back into sauce pan for 5 minutes to keep warm.

To Serve:
- dish out 1to 1 1/4 cups pasta per person
- layer 1/4 of spinach mix over pasta
- 1 salmon filet per person
- feeds 4

Alternatives:
- I actually prefer to use garlic powder and italian seasoning and the black pepper you have to crush manually
- I also mix butter in with the pasta and add garlic powder directly to the pasta prior to mixing w/ other ingrediants

    This is the first recipe from SP that I've tried and my family and I LOVED it! I used leftover steelhead trout that my stepson caught and whole wheat spaghetti and felt like we were eating very healthy and it was delicious! - 3/18/09
