Introduction

Great on homemade bread with a little spinach and/or cilantro pesto! Great on homemade bread with a little spinach and/or cilantro pesto!
Number of Servings: 10

Ingredients

    2 - 12oz block of extra firm tofu
    2 Tbs red curry paste
    1 c. low-fat plain greek yogurt
    1/2 onion - diced small
    3 stalks celery - sliced thin
    100 grams (about 15) red seedless grapes - diced
    Seasonings to taste (ex. salt, pepper, garlic, smoked paprika, etc)

Tips

Allow this to sit 30 minutes or more so the flavors can blend.


Directions

1. Thoroughly drain tofu; crumble.

2. Stir in curry paste and yogurt.

3. Add remaining ingredients - season to taste. I made mine rather mild so my kids would eat it. Smoked paprika add great flavor and color.
