Vegetarian Meals Sandwich Recipes (Most Popular)
A super tasty vegan alternative to chicken, egg or tuna salad. There are endless combinations to this salad. I like to serve it in pitas or tortillas with spinach and peppers, but you can alter this recipe to suit your needs. I used vegenaise, but you can use any other suitable mayo substitute such as nayonaise or even a non-vegan mayo.

I have always liked vegetarian "burgers" as an alternative to their high fat, high sodium meat counterparts. When my co-workers and I decided to go to Chili's for lunch, I assumed that the "Guiltess Black Bean Burger" would be just that...or at least a healthy alternative. It sounded delicious, but when I looked up the nutritional content before we left the office, I was shocked to see that one burger contained 1790 mg of sodium...More than I would like to consume for an entire day!! Since I'm watching sodium content, this was clearly not a good choice and I ordered something else. I figured I could make a much more heart healthy recipe and add some avocado, one of my favorites! Got this from pg 256 of Vegan Living (complete idiot's guide to) book. But, like any good salad you can make this one your own by tweeking the recipe. All appropriate credit to them but I wanted to add it here for anyone else eating vegan. I hope that's ok. Great for picnics or other occassions where you might normally have egg salad. This reminds me of tuna salad because of the mayo and celery. It's a good sandwich filling for vegetarians or those trying to get more beans into their diet. To make it vegan, just use Veganaise for the mayo.

This is a vegetarian version of a delicious recipe that I loved in the UK: curried chicken salad on toast. Make it vegan by substituting the mayo for nayonaise brand or another vegan mayo. Loads of protein and fiber, and you'll be getting fruit and veggies on this sandwich at the same time.
This is a great meal idea, lunch or dinner. It is full of flavor and very satisfying.

This is a dish you can use many ways!!! Eat it like a burrito, in place of taco meat on your tacos, as a dip for tortilla chips, or our favorite way is to put just a little in a soft flour taco with a little salsa and low fat sour cream. yummm... however you eat it, it is wonderful! Make it healthier with a whole wheat tortilla!!
Seriously EASY and tasty flour tortillas. Take the time to prepare them, be patient with the food and with yourself, and you'll have really awesome wraps for a sandwich :) Having a cast iron tortilla pan works nicely, as does the ability to roll sticky dough into the thickness of a traditional crepe.
I started with my basic seitan recipe; tweaked it somewhat, and came up with this. Now, my little love-of-my-life isn't too very hot on seitan (and, yaki-fu? Not in the LEAST!) but she stopped, mid-bite, on this one, and looked at me with "I-love-you" eyes. Yeah, they're THAT good.
