Ingredients

    Use half of a 16-ounce loaf of French bread, cut into 8 , 3/4 inch thick slices.

    3 tablespoons pesto
    1/4 cup fat free or light mayonnaise
    2 teaspoons balsamic vinegar
    1 teaspoons minced garlic
    1/4 teaspoon dry mustard
    1 green onion, chopped
    1/8 teaspoon ground black pepper
    8 slices of French bread, lightly toasted
    1 cup spinach leaves or gourmet salad greens
    8 (1/4 inch thick) slices of your favorite tomato (on the vine for me) about 2 or 3 tomato's.

Mix first 7 ingredients in small bowl.
Spread mayonnaise mixture evenly on 4 slices of bread.
Next place spinach or greens on bread.
Place 2 slices of tomato on top of the greens.
spread the remaining mayonnaise mixture on the other four slices of bread and place on the top.

Calories 242, fat 7.8,carbs 36.3, protein 7.2, fiber 2.6, sodium 556, iron 2mg, calcium 102mg.

I served them with orange slices 1/2 orange per plate. use any pallet cleansing fruit you want. Hope you try it and enjoy!!

    I cut the sodium by substituting half the mayo with plain yogurt and making my own pesto. The rest was as written. It's a great spread for many different types of sandwiches. - 7/19/10

    I used pesto I made using basil from my garden, a fresh whole wheat boule from the farmers' market, arugula, and tomatoes from my garden. As an open-faced sandwich it presents beautifully and it was a big hit in the taste department too. - 7/19/10

    Delicious! Everyone loved the pesto sauce. I would recommend cutting some of the calories by not putting the top bread of the sandwich, that way you have slightly less carbs and can eat a little more of the veggies. Just put the bread, pesto, lettues, then tomato. Delicious! - 6/6/10
