This is a vegetarian version of a delicious recipe that I loved in the UK: curried chicken salad on toast. Make it vegan by substituting the mayo for nayonaise brand or another vegan mayo. Loads of protein and fiber, and you'll be getting fruit and veggies on this sandwich at the same time. Ingredients

    12 pieces (1 serving) Morningstar Farms faux Chicken or another chicken substitute, defrosted
    2 T Mayonnaise or vegan mayo
    8 slices Whole or multi-grain bread
    1/4 cup Grapes, halved
    1/4 cup Celery, diced
    1/4 cup Apple, diced
    1/8 cup Onion, diced
    1 tsp. Curry Powder
    4 leaves Romaine


Directions

Dice grapes, celery, onion, and apple. Mix these with "chicken," and curry powder. Fold into mayo. Salt and pepper to taste.

Toast bread.

Divide "chicken" salad into four equal amounts and spread onto 4 of the 8 slices of toast. Top with lettuce leaf and other slice of toast. Cut on the diagonal. Enjoy!

    Since becoming a vegetarian there are certain types of sandwiches... BBQ pulled pork, sloppy joes, and especially good chicken salad. I'm excited to try this. Just one question. Bread is usually 100 calories a slice, how can one sandwich only be 208 cals? Is the bread included in the cal. count? - 3/5/09

    Hi DK- I used SparkPeople's generic multi-grain bread entry instead of a specific brand of bread; it has 130 calories for 2 slices. Maybe that entry isn't accurate. If you're concerned about your tracker, enter these items individually using your own bread's nutritional values. Good luck!

    Wow, this sounds amazing! I'll definitely have to try it. At the supermarket here they have a "gourmet chicken salad" with grapes and it's REALLY good. They also add chopped pecans which tastes great. - 12/7/08
