Introduction
This is a vegetarian version of a delicious recipe that I loved in the UK: curried chicken salad on toast. Make it vegan by substituting the mayo for nayonaise brand or another vegan mayo. Loads of protein and fiber, and you'll be getting fruit and veggies on this sandwich at the same time. Since becoming a vegetarian there are certain types of sandwiches... BBQ pulled pork, sloppy joes, and especially good chicken salad. I'm excited to try this. Just one question. Bread is usually 100 calories a slice, how can one sandwich only be 208 cals? Is the bread included in the cal. count? - 3/5/09

Hi DK- I used SparkPeople's generic multi-grain bread entry instead of a specific brand of bread; it has 130 calories for 2 slices. Maybe that entry isn't accurate. If you're concerned about your tracker, enter these items individually using your own bread's nutritional values. Good luck!
