Ingredients

2 tsp. Canola Oil
1 medium onion, chopped
6 cloves garlic, minced
2 15 oz. cans chickpeas, drained
1 Poblano pepper, diced
1 TBSP Red Curry Paste
3 TBSP Mild Yellow Curry
3/4 tsp. cayenne pepper ( or to taste)
1 15 oz. can petite diced tomatoes
4 cups fresh spinach leaves
6 oz. fat free plain Greek yogurt
Tips
Can make as mild or as spicy as you like by adjusting what type of curry you use and amount of cayenne pepper.
Directions
Heat oil in large wok over medium-high heat. Add onions and stir fry until golden. Add garlic, chickpeas, poblano pepper, curry paste, curry powder, cayenne pepper, and mix well, heating through.
Add tomatoes and let simmer for 2-3 minutes until heated through.
Add spinach and stir until wilted.
Remove from heat and stir in yogurt to finish sauce.
Serve over rice or with Naan (not included in calorie count)
