Ingredients

    4 medium Russet Potatoes, washed skin on diced
    1 Tbsp. olive oil
    3 Tbsp. grated parmesan cheese
    2 tsp. dried parsley
    1 tsp. paprika
    1/2 tsp. garlic powder
    1 tsp. salt
    1/8 tsp. cayenne pepper

Directions

Preheat oven 450 degrees. Spary sheet pan with cooking spray. Slice potatoes in half then cut into half inch cubes. Place potatoes in a medium bowl and toss with oil. Combine parmesan, parsley, paprika, garlic powder, salt, and cayenne pepper in a small bowl. Add Parmesan mixture to potatoes. Toss to coat evenly. Arrange Potatoes on baking sheet. Bake, turing once until potatoes are lightly browned and easily pierced with a knife, about 25 min.

    These are awesome - however, the calorie count is closer to 200...not 84.5. Not sure where that count came from but it's way off. - 10/16/12

    Made a close version to these. Left the skins on and cut into fries. Put them into a bag and sprayed with cooking spray. Added garlic salt, pepper, and Parmesan cheese then shook the bag and baked them. They were great! Much better than fast food fries and so much better for you!! Will make again! - 8/18/12

    These were wonderful! This is my new weekly potato recipe. So quick easy and flavorful. My fiance loves these! I also left off the cayenne pepper since i didnt have any but they were still wonderful - 4/2/10
