Ingredients

    1 lg red bell pepper
    1 med yellow bell pepper
    1 med green bell pepper
    1 jalapeno
    1 med onion, white or vidalia
    2 cloves garlic
    8 oz Swanson 99% fat free chicken broth
    3 c low fat black beans, drained, not rinsed
    1 tbsp paprika
    3 tsp ground cumin
    salt and pepper to taste
    PAM

Directions

sautee onion and garlic in PAM or non stick pan, then add peppers. Saute until light in color, add jalapeno, paprika and cumin. Add broth, add black beans, simmer 30 minutes.
