Introduction

These are great way to use leftover mashed potatoes as a side dish. You can also make fresh or use dry potatoe flakes. We eat them plain or with ketchup or sour cream. We eat them plain or with ketchup or sour cream. Depending on what our main dish is.

Ingredients

    Leftover Mashed Potatoes, 2 cup
    Onions, raw, .5 cup, chopped
    Flour Self-rising, 0.25 cup
    Egg, fresh, whole, raw, 2 extra large
    Salt and Pepper to taste, 1 serving

Directions

Mix all ingredients, except salt and pepper, together. Form into 6 patties. Melt butter in fry pan, once melted and pan is heated to medium, place in patties, sprinkle with salt and pepper (to taste). Brown on each side. Don't brown too fast as you want the onion to cook. Serve.
