Introduction

Delicious summer fruit muffins! No egg or dairy. Delicious summer fruit muffins! No egg or dairy.
Number of Servings: 12

Ingredients

    2 c Flour, white
    2 tsp Baking Powder
    1 tsp Baking Soda
    1/4 tsp Salt

    1/2 c brown sugar
    1 c + 2 Tbsp Soy Milk
    1 Tbsp Lemon juice
    1/3 c Canola Oil
    1 tsp Vanilla Extract

    1 c chopped Peaches
    1 c fresh Blueberries

Tips

I find it makes 12-18 muffins depending on the size of your tins.
This is adapted from VEGANYUMYUM's peach muffin recipe, via Yummly


Directions

Heat oven to 350.
Stir dry ingredients together in a large bowl..
Whisk wet ingredients and sugar in medium bowl until well blended.
Stir fruit into dry ingredients.
Fold wet to dry just until moist.

Spoon into muffin tins (parchment lined)
Bake about 20 minutes, till toothpick comes clean.

Serving Size: makes 12 large muffins
