    1 Nori wrapper
    1 cup cooked brown rice
    1 tsp. rice vinegar
    1 pkt. Truvia
    pinch of ginger
    3 oz. cooked and cleaned shrimp, tails removed
    2 long strips each;
    yellow pepper
    Red Pepper
    For the sauce;
    1 tsp. Sriracha or hot sauce
    1 tbsp. soy sauce
    1 tsp. agave nectar
    1 tsp. rice vinegar
    pinch of ginger
    few drops of sesame oil


Mix the sauce. Cool the brown rice and mix in; vinegar, truvia and ginger. Set aside. Place Nori wrapper half on a sushi mat lined with plastic. Layer the carrots and vegetable strips. Roll tight. Refrigerate. Place a new piece of plastic on the sushi mat and place the rice in a single long rectangle big enough to cover the refrigerated roll. Place the refrigerated roll onto the rice and roll tight. Cut into 9 pieces. Serve.

Serving Size: makes 3 servings of 3 rolls each. 9 total.
