Ingredients

2 lbs (32 oz) pork loin, boneless
2 medium granny smith apples
2 carrots (about 1.5 cups)
1 packet of Webber brand "Just Add Juice" Teriyaki Marinade Mix.
Tips
When reducing the heat, I spoon the liqud over the roast once again and recover. This is not necessarily necessary, but I feel the need to mess with things while they cook.
Directions
*NOTE: Instructions are for thawed meat. Increase cooking time accordingly for frozen.*
From a quarter of one apple, slice 5-8 very thin slices to garnish the cooking roast. Then, using a whole-fruit juicer, juice remaining apples and the carrots to produce approximately 1.5 to 2 cups juice. Add teriyaki seasoning packet to juice, mix well and set asside.
Place thawed pork loin roast in slow cooker. Score the top of the roast with a knife, making shallow diagonal surface cuts about half-an-inch appart. Turn the pan and repat these cuts running purpendicular to the first set.
Now, spoon the seasoned juice over the scored pork loin until the cuts are full. Carefully lay the thin apple slices accross the cut surface, slightly overlapping (should look like a series of scales or the avocado on the outside of a sushi roll). Pour all remaining juice over the roast.
Cook in covered slow cooker for 2 hours on high heat, then reduce to low for 4-5 hours.
Slice into 1/4 inch thick medalians and serve over brown rice with a vegetable dish (not included in nutrition)/
