Introduction

Ground turkey with lots of chopped veggies, cajun seasoning and V-8 juice makes an easy meatloaf. Ground turkey with lots of chopped veggies, cajun seasoning and V-8 juice makes an easy meatloaf.
Number of Servings: 6

Ingredients

    Mix wet ingredients:
    1 beaten egg
    1 5.5 oz can of Low Sodium V-8 juice
    Add:
    1/2 cup onion, chopped
    1/2 medium red pepper, chopped
    1/2 cup mushrooms, chopped
    1 lb ground turkey meat, 93% lean
    Season with:
    1/2 tsp Cajun seasoning blend
    1 T low-sodium soy sauce

Directions

Beat egg. Add V-8 juice, then all other ingredients. Mix with hands. Pat into 8" x 10" pan to make a shallow loaf. Bake in preheated 375 degree oven for 50 - 60 minutes until browned. Let sit for at least 5 minutes before slicing.

Serving Size: Makes 6 thick slices of meatloaf
