Number of Servings: 8

Ingredients

    6 Medium Yellow Onions
    3 Medium Sweet Onions or 2 Large
    2-3 Tbsp EVOO
    about 4 Tbsp or 1/2 Cup Butter
    1/2 cup Dry Sherry
    2 tsp Worchester sauce
    2 Knoor Homestyle stock in Beef and the water to dissolve it

Tips

It is going take a while to properly cook the onions. Try not to burn them. I cooked on very low heat for about an hour. It takes some time.

Use more or less cheese to taste. Try to find low fat or fat free for healthy alternatives.


Directions

Slice Onions
In a large Skillet, Add Oil and Butter and melt together
Add onions to skillet and caramelize slowly (this may take a while)
I slightly browned the last 2 onions separately after cooking the first batch until yellow and translucent. Adds a little more color and a little more caramelized flavor
While cooking this, in a large soup pot, add beef broth, sherry, Worcester, thyme, salt and pepper and heat on low
Add onions to broth after they are finished
Adjust salt and pepper to taste. May not add it until now
Bring to simmer and simmer for about 30 minutes
Turn Oven to broil
Put soup in oven safe crocks and cover with 1-2 slices each of Cheese (Provolone or Muenster)(Not included in nutrition)
Broil Crocks until cheese is brown and bubbly
