Introduction

This is a very yummy fresh salad - I don't add any dressing but you can to your own taste. You can also add or subtract any vegtable you like or in season. Do not peel the vegtables as most nutrients are in the peels (except for butternut squash and onion). Makes about 8 cups and lasts for a week in a plastic bag in the fridge. Ingredients

    1/4 wedge Red and Green Cabbage - shredded
    1 medium Zucchini and Yello Squash - shredded
    1/4 wedge of Onion - any that you like - shredded
    2 Carrots - sliced or shredded
    1 stalk Celery - sliced or shredded
    1/4 wedge Butternut Squash - shredded
    1/2 Sweet Potato - shredded
    1 Turnip - shredded

    Mix all together and enjoy - very fresh and filing.

Tips

Substitute any vegtable to taste or in season.
