Ingredients

    1 Cup Old Fashioned Oats - dry
    1 Cup Whole Wheat Flour
    1/2 Cup Flour, white
    2 tsp Baking Powder
    1/2 tsp Baking Soda
    1/2 tsp Salt
    1/4 Cup + 1 TBS Splenda Brown Sugar Blend
    1 Cup Buttermilk, low fat
    1/4 Cup Orange Juice
    2 TBS Canola Oil
    1/4 Cup Egg substitute, liquid (Egg Beaters)
    1 tsp Vanilla Extract
    2 Cup Blueberries
    1/4 Cup Almonds, chopped
    2 Scoops EAS Lean 15 Protein Powder, Vanilla Cream

Directions

Grind oats in blender. Whisk oats, flours, baking powder, soda, salt, protein powder and 1/4 cup of brown sugar blend in large bowl.

Whisk buttermilk, orange juice, oil, egg and vanilla in small bowl and then stir into flour mixture; fold in blueberries. Spoon batter into prepared muffin tins.

Combine nuts and the 1 TBS brown sugar blend and sprinkle on top of batter.

Bake in 400 degree oven for 22 minutes or until toothpick comes out clean. Cool in pan on wire rack for 5 minutes. Remove from pan and cool completely.
