Ingredients

bell pepper
onion
roma tomato
mushrooms
chicken breast
fresh garlic
olive oil
Pinch to 1/4 or 1/2 tsp of any or all of the following spices:
italian seasoning
garlic salt
minced onion
minced garlic
basil
Directions
Chop bell pepper into strips
Coarsely chop onion
thin slice tomato
slice mushrooms
Saute pepper and onions in olive oil until slightly soft (approx 5 minutes)
add tomato and onion and continue to saute (approx additional 5 minutes)
add spices
add chicken (cook until chicken is tender)
Meanwhile start your pasta water and cook pasta as directed (pasta should be ready about the same time as the veggies above)
Serve veggies over pasta including the juices
Makes 2 servings
MORE CHOICES:
Always feel free to adjust ingredients according to your personal tastes.
You can also eliminate or substitute the chicken.
And/or you can make just the veggies as a side dish.
