Ingredients

    1 red pepper, diced
    1/2 cup diced red onions
    1 can corn, drained
    1 Tbsp olive oil
    1 pkg (12 oz) shelled cooked edamame
    1/4 cup oil & vinegar dressing ( Annie's Naturals Organic Oil & Vinegar is what I used for Daniel Fast)
    2 tsp minced mixed fresh herbs like parsley, oregano & rosemary

Directions

In a skillet over medium-high heat, cook pepper, onions & corn in oil for about 3 minutes or until peppers are tender, stirring often.

Stir in edamame, dressing and herbs. Cook 2 minutes or until heated through. Season with salt & pepper.
