Ingredients

Canadian Bacon - 2oz portion
Mushrooms - 1 cup sliced
Sweet Peppers (Yellow, Red) - 1/2 cup ea
Fresh Spinach - 1 cup (rough cut)
Whole large Eggs - 4
1% milk - 2 tbsp
Italian blend Cheese - 1/4 cup
Salt - 1/4 tsp
Pepper - 1/2 tsp
Thyme - 1 tsp
Garlic Powder - 1tsp
Rosemary - 1/2 tsp
Tips
- If you whisk the spices together prior to adding them to the mixture, it will give a more consistent delivery of taste.
Directions
- Spray medium size fry pan with non-stick spray
- Add Bacon and cook untill slightly crunchy
- Add all veggies and spices and continue to cook for 5 min or until slightly soft.
- remove from heat and place off to side.
- Whisk eggs and milk in a bowl.
- spray a 9 x 9 caserole dish and transfer all cooked ingredients
- sprinkle cheese blend over top of veggies and bacon mixture
- add eggs
Cook at 350F for 30-35 minutes until desired consistency of eggs is reached.
