Ingredients

    1 1/2 cup flour
    3/4 cup sugar
    1 tsp cinnamon
    1 tsp salt
    1 tsp baking powder
    3/4 tsp baking soda
    1 cup unpeeled shredded zucchini
    2 oz. chopped walnuts
    2 eggs
    1 tsp. vanilla
    4 TB butter
    2 oz. 1/3 less fat cream cheese

Directions

Mix butter, cream cheese, eggs, sugar, vanilla with electric mixer. Stir in zucchini, then dry ingredients. Pour into greased pan and bake at 350 for 45-50 min.
