Ingredients

4 ounces whole wheat angel hair pasta
1 cup red peppers chopped
1 cup snow peas, blanched
2 scallions chopped
2 T canola oil
2 T rice vinegar
2 T soy sauce
1 T sesame oil
1/4 C reduced fat peanut butter, creamy
1/4 C warm water
1 T honey
1 garlic clove, minced
1 tsp. grated ginger root
1 T sesame seeds toasted
Directions
Makes 4 servings.
Cook pasta in boiling water for 6 minutes. During last three minutes of cooking throw in snow peas to blanch. Drain and put in large bowl. Add peppers, and scallions.
Whisk together next nine ingredients and pour over warm pasta. Toss well to coat. Sprinkle with toasted sesame seeds and serve warm.
