Introduction

A fast, easy Mexican dish that my kids LOVE! You can slim this down by leaving off the cheese. Ingredients

    3/4 pound chicken breast - diced
    1 can diced tomatoes (15oz)
    1 can black beans (15 oz)
    1 packet taco seasoning mix
    1/3 cup water
    1 cup shredded cheese - I like using chihuaua but will use a blend of that and cheddar if I don't have enough of one kind on hand
    10 corn tostada shells


    optional toppings (not in calorie count):
    avocado
    diced tomatoes
    salsa
    sour cream

Tips

You will have liquid leftover after you "fill" your tacos. I often add minute rice and salsa to that liquid to make a delicious side dish. Serve with a green salad and you have a complete, healthy dinner that even my pickiest daughter (who usually won't eat beans, tomatoes, or anything green) will eat - it's her favorite thing to have for dinner.


Directions

Preheat oven to 350. Saute the chicken (I use a non-stick pan and no oil) until cooked through. Drain and rinse black beans. When you are sure the chicken is cooked through, add the black beans, tomatoes, water and taco seasoning mix. Simmer for flavors to combine - about 15 minutes. Using a slotted spoon, put equal amounts of the mixture onto 10 tostadas on a cookie sheet. Sprinkle with shredded cheese. Bake for 7-10 minutes until tostadas are crispy and cheese is melted.
