Introduction

Very basic red chili that's is high in protein and great for turkey dogs or over cornbread. It might not win any prizes but it preps fast and is tasty. Ingredients

    8oz 90/10 ground beef
    1 10oz can of Rotel
    1 28oz can crushed tomatoes
    1 cup chopped onion
    1 can red kidney beans, drained and rinsed
    1/4 cup chilipowder
    1 tsp garlic powder
    2 tsp ground cumin
    2 tsp onion powder
    1 6" corn tortilla

Tips

This is a VERY basic and adaptable recipe. I use hot rotel if the kids aren't eating it and fresh tomatoes and chilis from the garden in the summertime. Feel free to substitute your favorite chili spice mix. This is more of a guideline.


Directions

Brown beef with onion in a nonstick skillet. Add all other ingredients, except the tortilla, the beef/onion mixture, and a 28oz can of water into slow cooker. Cook on high for 4 hours or low for 8 hours. With 1 hour to go add the tortilla, broken up, to thicken if desired.

Serving Size: Makes around 6 generous 1 cup servings
