Ingredients

    1 lb small red potatoes, quartered
    4 Med carrots, cut into 1" pieces
    1 onion, cut into 1 " pieces
    6 Bonless, Skinless, Chicken Thighs
    1 can (14 oz) chicken broth
    1 (6oz) can tomato sauce
    2 Tbsp olive oil
    1 Tbsp turmeric
    1 tsp chili powder
    1 tsp ground cumin
    1/2 tsp salt
    1/2 tsp garlic powder
    1/2 tsp pepper

Directions

Place potatoes, carrots and onion in greased 13 x 9" baking dish: add chicken. In a small bowl combine the remaining ingrediets and pour over top.
Cover and bake at 400deg for 1 hour.
