Introduction

Ingredients

    Tbsp Butter
    2 slices (large) of dark rye bread
    4 oz cooked corned beef
    1/2 C Sauerkraut
    2 slices Swiss Cheese

    Thousand Island Dressing:
    2 Tbsp Mayonnaise
    2 Tbsp Pickle Relish
    2 Tbsp Ketsup

Tips

Every once in a while, I have to tip over my cholesterol applecart. This, if only 1/2 is eaten, isn't as bad as the Doctor says it is, and if you use lower calorie and salt count ingredients, it isn't bad at all.


Directions

I brown one side of the bread in a frying pan using the butter. I "pile on" the meat, Sauerkraut and cheese, in that order on BOTH pieces of bread, separating it into halves. I place the 2 "sides" of the sandwich under the broiler on the MIDDLE rack until the cheese melts, and the ingredients are warmed. I then, "flip" the halves together for serving.

Serving Size: Makes 1 LARGE Sandwich - I eat 1/2 at a time.
