Introduction

I make this in batches early in the week. It's a very spicy, strong flavor by itself, but once you pour it over a salad with fresh vegetables, the flavor is considerably weakened. I blend in a blender so it completely emulsifies. The dressing never separates before I finish off the whole batch! If the garlic is not fresh, use more. This recipe is based on very juicy garlic. Also, remove any green sprouts in the middle of the garlic, if any. Otherwise it adds a bitter flavor. I make this in batches early in the week. Ingredients

    3 TBSP roughly minced Fresh Garlic (about 5-6 medium cloves, or 40 grams)

    1 TBSP Whole Grain Dijon Mustard (15g)

    1/2 tsp Kosher Salt

    1/4 tsp Freshly Ground Black Pepper

    3/4 c Balsamic Vinegar (Alessi Autentico)

    1/3 c Extra Virgin Olive Oil

    1 TBSP Canola Oil

Tips

This recipe can be blended by hand with a whisk. However, you'll have to shake or whisk again each time you serve yourself. I'm not sure how long it lasts in the fridge, as I usually run out after 3 or 4 days.


Directions

Add all ingredients EXCEPT the oils into a blender and "mix" until well blended.

Remove the cup from the top of the Blender. Take a folded paper towel and hover over the hole to avoid splashing. Slowly pour both oils into the blender while on "mix" setting.
