Ingredients

    2 Tbsp olive oil, extra light
    1 cinnamon stick (or 1/4 tsp ground cinnamon)
    1/4 tsp ground cloves
    2 chicken breasts, cut into pieces
    2 garlic cloves, minced
    1/4 c chopped fresh onion

    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1/2 tsp ground ginger
    1/2 tsp cayenne pepper (red pepper)
    1/2 tsp turmeric powder

    1/2 cup tomato sauce
    1/2 cup heavy cream
    1 Tbsp parlsey flakes
    1/2 cup coconut flakes

Tips

Leave out coconut to save calories. Add water to thin sauce/make it spread farther.


Directions

Heat oil with cinnamon, cloves. Add onion and garlic and cook until opaque.

Add chicken and cook. Mix in tomato sauce and seasonings. Simmer 10 minutes. Add cream and coconut, simmer another 5 minutes. Sprinkle parsley and serve.

Serving Size: Makes 4 servings (1/2 chicken breast each)
