Ingredients

    shredded cabbage
    shredded carrots
    walnut oil
    cider vinegar

Tips

I make 8 cups of slaw and eat it over 5-6 days - very satisfying and I always have something healthy & quick to grab. great at room temp with grilled chicken tossed on top.

I switch up the cole veggies and the calories don't change as long as I match quantities. Instead of just green cabbage I'll use broccoli or cauliflower, or partially red cabbage. By switching the dried fruit, nuts and veggies around I don't get tired of it.

Often substitute other dried fruit (w/o added sugar) or different nuts. Obviously you can substitute the oil and vinegar of your choice - I love cold pressed unrefined walnut oil for flavor and health benefits.


Directions

wash & shred veggies, add nuts, raisons, sesame seeds, toss. Put vinegar & oil in small jar, tighten lid, shake until emulsified (20 seconds?). Toss salad w/ dressing and allow to mellow in fridge overnight or 1 day.
