Ingredients

2 cups sourdough starter
1 cup warm milk 105 F
1/2 cup sugar
1/2 cup melted butter
2 tsp salt
2 large eggs
5 cups flour
1/2 cup sugar
1 cup unsweetened applesauce
2 TBS cornstarch
Tips
Try prunes or other flavors next time. Also try more sugar in the dough for a sweeter bread. These were nice and crusty but not as light and fluffy as I hoped.
Directions
Mix starter with warm milk and 1/2 cup sugar, then add salt and eggs and pour melted butter slowly to incorporate without cooking/overheating batter. Add flour 1/2 cup at a time and knead the last cup in by hand. Allow dough to rest covered and rise 30 minutes.
Mix applesauce, sugar, and cornstarch and allow to sit while working dough into kolaches.
Divide dough into 32 golf ball sized spheres and press middles down to make indentation for filling. Fill kolaches and let rise for 1 hour. Bake at 400 for 18-20 minutes.
Serving Size: Makes 32 kolaches
