Ingredients

2.5 tbsp unsweetened applesauce
2 tbsp unsweetened vanilla almond milk
2 tsp powdered egg whites
2 tbsp Torani or Da Vinci sugar free vanilla syrup
1/4 tsp ground pure vanilla beans (or 1/2 tsp liquid)
.5 tbsp Coffee Mate sugar-free powdered coffee creamer
1/2 cup Truvia, Splenda, or Stevia
1/2 cup whole wheat flour
1/2 serving vanilla protein powder--I used one scoop of Chocolite Vanilla
Directions
Preheat oven to 350 degree.s
Spray mini cupcake pan with nonstick spray.
Whisk together powdered egg whites and Torani syrup. Set aside.
In a bowl, whisk together flour, coffee mate, truvia and protein powder. Add in applesauce, almond milk, vanilla extract, and the egg white mixture.
Stir well to combine.
Scoop evenly into the mini muffin pan, making 12.
Bake for 10-12 minutes (may take a bit longer because of the protein powder--mine took about 20 minutes total). They're done when firm to the touch and a toothpick comes out clean.
