Introduction

Something I came up with when trying to decide on dinner! Something I came up with when trying to decide on dinner!
Number of Servings: 4

Ingredients

    1/2 cup onions chopped
    400 grams lean ground beef
    1 3/4 cups water
    3/4 cups of quinoa (washed)
    1/2 cup shredded cheese
    Whole wheat tortillas 4-6 (depending on size etc)
    Tex Mex spices (or other spices of your choosing
    (May also like sour cream or salsa on the side)
    Large pan/skillet
    Roasting tray

    1. Brown the meat and add the onions and a teaspoon of spice
    2. Throw in quinoa, tomatoes and water
    3. Whilst this cooks add a little more spice.
    4. Leave to simmer for 20 minutes
    5. Quinoa will absorb much of the liquid, the rest will be lost to evaporation.
    6. Once it has boiled down to a thicker consistency, remove from heat.
    7. Ensure to have a preheated oven at 350 degrees
    8. Add meat and quinoa mixture to the tortillas and wrap.
    9. Add to a lined roasting tray and sprinkle with cheese.
    10. Put in oven for 10-15 minutes or until cheese melts and tortilla develops a slight crisp.
    11. Remove and enjoy!

Tips

Recipe may need to be tweaked depending on your number of servings. This is my first time trying so please let me know if anything could be done better.
