Ingredients

    2- 4 cups chicken broth
    1 1/2 cups Black beans (Dry cooked or canned)
    1/2 cup Navy beans (Dry cooked or canned)
    2 cups Brown Rice (cooked)
    1 cup, Onion, chopped
    3 Sweet Mini Peppers, chopped
    1 lb Turkey - Extra Lean Ground turkey, 454 gram(s)
    1 Tbsp Cilantro, ground or fresh
    1 tsp Basil. ground or fresh
    1 tsp Oregano. ground or fresh
    1/4 tsp Red Pepper Flakes
    1 dash Sea Salt
    1/2 Tbsp Coconut Oil

Tips

Precook dried beans and rice another day and refrigerate to save time.


Directions

Soak dried beans the night before in warm water or use canned.
Start beans cooking in chicken broth while you prep other ingredients.
Sauté turkey with coconut oil.
Chop fresh herbs, onions and peppers.
Add them to turkey as it finishes cooking to lightly sauté.
When beans a tender add brown rice, onions, peppers, herbs and seasoning.
Cook about 30 min more to blend flavors.
