Garden Chicken Salad Garden Chicken Salad

Ingredients

    2 Chicken Breasts (pre-packaged breasts)
    2 green onions, green and white chopped
    1 medium carrot, quartered and diced
    1 celery stalk, halved lengthwise and chopped
    4 Tbsp Mayonnaise
    4 Tbsp Plain Yogurt
    2 tsp lemon juice
    salt and pepper to taste

    10 or so medium sized Swiss Chard leaves or large romaine leaves

Tips

This was a "what's in my fridge" type of recipe. Put whatever chopped veggies you want into it.


Directions

Chop chicken into eights (chunks). Boil for about 10 minutes (or until the foam on top starts to liquefy). Let cool until you can handle it. Put all chicken in a bag and pound with a meat mallet for a quick shred. You may want to cool the chicken in the refrigerator for about 15 more minutes.

Blend all ingredients together. Refrigerate if the chicken is still warm.

Serve in the chard/lettuce leaves like roll ups.
