Ingredients

    Chicken breast tenderloin
    Land O Lakes Garlic and Herb New Saute Express, 1 cube
    Zucchini, 2 cup, sliced
    Half of a small sweet yellow onion
    Juice of half a small lemon
    Salt, 1 dash
    Pepper, black, 1 dash
    Bread crumbs, dry, plain, 2 tbs

Directions

Chop chicken into bite size pieces. Slice ends off of zucchini and slice into thin ribbons. Slice onion, thinly. In a medium skillet, heat half a cube of saute express until melted. Add cubed chicken. Cook stirring frequently, until chicken is no longer pink. Remove from skillet, drain off excess oil. In the same skillet, heat other half of cube, toss in onion and saute until onion begins to soften. Add zucchini ribbons. Cook tossing frequently, until zucchini is at desired tenderness. While zucchini is cooking, take 2 tbs dry bread crumbs and heat in small dry skillet over medium heat, stirring frequently, until toasted. Once zucchini is finished, add chicken back to skillet, toss to heat. Just before serving, drizzle with fresh lemon juice. Serve with salt and pepper to taste, top with toasted breadcrumbs.
