Ingredients

    1 pound extra lean ground beef or buffalo
    1 - 16 oz. can stewed tomatoes un-drained
    1/2 cup water
    1 clove garlic, minced
    2 tsp. Italian herb seasoning
    1 - 10 oz. package lasagna noodles
    1 cup low fat cottage cheese
    2 T parmesan cheese
    1 tsp. oregano, 1 T parsley - optional
    Vegetable cooking spray
    1 cup shredded Colby cheese

Directions

1. Cook ground beef in skillet over med. heat until browned. Drain fat.
2. Stir in tomatoes, 1/2 cup water, garlic and Italian seasoning. Cover and bring to a boil. Reduce heat and simmer 20 minutes
3. Cook noodles during above time according to package directions.
4. Cook spinach according to package directions. combine spinach with cottage cheese, parmesan cheese, and herbs.
5. Place half of cooked noodles in 9 by 13 pan coated with baking spray. Top with half each of cottage cheese mixture and Colby cheese. spread half of meat mixture over top.
6. Repeat layers with noodles, cottage cheese mixture, cheese and meat mixture. Bake at 350 for 45 minutes.
