Ingredients

    1 cup leftover instant potatoes or boiled potatoes
    1 can costco salmon drained
    1 small onion chopped
    1 raw egg
    1/2 cup bread crumbs or left over crushed potato chips
    salt and pepper
    6 tbs of oil for pan frying
    1/2 cup panko crumbs for rolling patties

Tips

making 6 patties makes them a little bit easier to turn in the skillet, make a sauce with mayo, lime and dill or serve with a splash of lemon.


Directions

mix the first 6 ingredients in a bowl, make 4-6 patties, scatter panko on a paper plate and dip each patty into crumbs, test oil for rediness, this is important so patties do not fall apart, fry on medium heat, watch carefully , turn when toasted to cook other side. about 10 minutes a side
