Ingredients

    INGREDIENTS

    1/2 cup coconut flour
    1 tbsp sweetener of choice (equals 1 tbsp sugar)
    2 tsp baking powder
    2 tbsp cup whey protein powder
    1/4 tsp xanthan gum
    1 1/2 tsp ground cinnamon
    1/4 tsp nutmeg
    pinch cloves

    2 eggs
    1/2 cup canned pumpkin
    1 tbsp melted butter

    oil for frying

Directions

Combine Dry Ingredients in a bowl.
Add wet ingredients and mix.
Let stand for a few minutes.
Roll out between 2 pieces of parchment to thickness of about 1/2".
Use a doughnut cutter to cut out the dough. You can re-roll the leftover bits since this dough has no gluten it won't get tough.
Heat oil to 375 degrees. Carefully place donuts in oil and deep fry for about 1 minutes on each side. Allow to dry on paper towels.
