Ingredients

    2 c. all purpose flour
    1/2 c. peanut flour (or substitute with Peanut butter and reduce milk by 1/4 c.
    1 Tbsp. baking powder
    1/2 tsp. sea salt
    1/3 c. white sugar
    1/3 c. brown sugar
    1 tsp. vanilla
    1 Tbsp. ground flax seeds + 3 Tbsp. water
    1 1/2 c. almond milk
    1/4 c. olive oil or canola oil
    1/3 c. semi-sweet chocolate chips

Directions

Preheat oven to 400 degrees. Mix flax seeds and water in a small bowl to let sit for about 10 minutes to make "flax egg." Set aside. Combine dry ingredients in a large bowl. In a separate bowl, whisk to combine wet ingredients, then add flax egg. Pour wet ingredients into dry ingredients & mix just until combined. Add chocolate chips. Spoon into greased muffin tins & bake for 20 minutes.
