Ingredients

    Quinoa - Casbah - 1 45g serving,
    Apricots, dried, 170 grams (6oz)
    Cranberries, dried, 57 grams (2oz)
    Raisins, 57 grams (2 0z)
    Sun Dried Tomatoes, 57 grams (2 oz)
    Parsley, 1 tbsp

Directions

Cook quinoa according to instructions - cool
Chop Apricots lengthways
Chop tomatoes lengthways and then in half
Chop parsley
Combine all ingredients

Serving Size: Makes 4 generous portions
