Introduction

1 celeriac (approx 700g clean weight, larger will yield more servings), diced
1 onion, chopped
Juice of 1/2 lemon
1/2 tbsp olive oil
Stock or stock pots, as required

Tips

The celeriac flavour is quite delicate, so I tend to use water rather than stock, then add a single stock pot to c. 1.25 l of water (less than half recommended dilution) to add a little depth but not overpower it.


Directions

1. Chop celeriac, placing it in acidulated water (with splash of lemon) as you do this
2. Sweat onion in oil and a splash of water
3. Add celeriac and just cover with water (or stock if using).
4. Boil till tender (c. 20 mins), then blend, adding lemon and any salt and peppe to taste

Serving Size: 6 good bowls, or 8 small bowls as a starter
