Introduction

Number of Servings: 8

Ingredients

    4 lean chicken breasts, diced
    4 oven roasted potatoes, diced (from leftovers)
    1 large onion, diced
    3 cups mild green chili, diced
    8 cups chicken broth
    5 slices cooked bacon, crumbled
    3 tbsp garlic powder
    1 tsp salt
    3 tbsp cumin powder
    1 tsp black pepper
    enough water to fill stock pot

Directions

Spray a large skillet with cooking spray and cook chicken, spices, and onion, until done. Pour into large stock pot. Add ALL other ingredients. Bring to a boil. Reduce heat and let simmer 1 hour. Wonderful on a cold winter evening!

Serving Size: Makes 8 large bowls
