Introduction

quick, easy, slow cooker 1 pot meal quick, easy, slow cooker 1 pot meal
Number of Servings: 3

Ingredients

    3 med-large skin on potatoes, cut into quarters or 8ths
    24 baby carrot
    1/4-1/2 cup water
    3 boneless/skinless chicken breasts
    3 large onion slices
    1/4-1/2 cup f.f. Zesty Italian dressing (use as you wish)
    Mrs. Dash Italian seasoing
    several celery leaves from your stalks

Tips

I guestimated the Italian dressing & seasoning, You may want to add more or less than what I have in the recipe, depending on your preference. I've also seen shredded Parmesan cheese added to the crock pot, but my husband is not a fan of that cheese. So after I plated my serving, I sprinkled shredded Italian cheese on top of mine. Would be interested in seeing what it was like with the cheese mixed in during cooking. the cheese HAS NOT been added to the nutrition calculator.


Directions

Spray crock pot with cooking spray. Wash then cut potatoes in 1/4ths or 1/8ths, depending on how big they are. Place in bottom of crock pot & put carrots on top. Add about 1/4 cup water for extra moisture, more if you want more juices in the bottom. Add 1/2 of the Italian dressing along with Italian seasoning. Place chicken on top of that, then the onion slices & add rest of the dressing & seasoning. I placed celery leaves on top for added flavor. Place lid & cook on low for 6 hrs.

Serving Size: makes 3 servings of 5 oz of chicken
