Ingredients

    3 sweet potatoes
    4oz cream cheese
    6 6in flour tortillas
    1 can enchilada sauce
    3/4 cup Mexican blend shredded cheese
    Garlic powder, onion powder, cumin and chili powder to taste

Directions

Cook sweet potatoes in oven or microwave. Mash together with cream cheese and seasonings. wrap filling and cheese in tortillas, reserving about 1/2 cup of cheese. Place filled tortillas in a 13x9 pan and cover with enchilada sauce. Top with remaining cheese and bake at 400 degrees until cheese is brown.

Serving Size: Makes 6 overstuffed enchiladas
