Number of Servings: 4

Ingredients

8 oz. whole wheat penne pasta
8 ounces boneless, skinless chicken, chopped
    16 calamata olives
1 cup reduced fat feta cheese crumbles
    3 cloves garlic, minced
    1.5 cup whole mushrooms
    1 cup cherry tomatoes, halved
    1 tbsp balsamic vinegar

Directions

Cook pasta. In a separate pan, cook chicken and garlic in balsamic vinegar. When chicken is cooked thoroughly, add mushrooms and tomatoes to heat.

Mix cooked pasta, chicken, garlic and mushrooms. Add olices and top with feta crumbles.

This meal could easily become vegetarian by omitting chicken. Add onion or peppers for a twist.

We loved this! The second time I made it I made more of a "sauce" with a lot more balsamic vinegar, a little olive oil and some white wine. We liked it better the second time. - 6/13/08

This is a fantastic meal. Although I added some low fat greek salad dressing and mixed it in for a little more flavor. De-lish! - 5/5/08
