Ingredients

    Celery - approximately 4 cups chopped
    One onion chopped
    About one cup of chopped carrots
    4 cups of vegetable broth (or 2 cans)
    Two medium sized potatoes
    Salt, pepper, nutmeg to taste
    Cashew, almond, or other "milk" is optional

Directions

Sauté onion in a little water. Add seasonings. Add celery, carrots, and potatoes. Cover and simmer for about 30 -40 minutes, until vegetables are soft. Use immersion blender to make creamy, but leaving some lumps. Or you use regular blender or food processer in batches.
Return to heat and add kale until soft.
